- Mix Cooking Wine, Soy Sauce and Dark Soy Sauce in bowl. Set aside.
- Heat oil and brown sugar until sugar melted (golden colour). Careful not to burn the sugar.
- Add pork and sear until golden brown.
- Add ginger, chilli and bay leaves. Stir for 2-3 minutes.
- Pour sauce mixture and cook for 2 minutes
- Transfer to clay pot and add chicken stock. Simmer for 50mins on low heat until sauce reduced.
- Garnish with toasted sesame seeds, chilli and shallots.
