- Roast the pork45 minutes to 1 hour longer or until meat thermometer registers 170F and the potatoes are fork tender and nicely browned. Sprinkle the potatoes with chopped parsley. Serve pork and the potatoes right from the pan. Reheat the gravy to serve with roast and potatoes.
